Chef Baxevanis’ menu elevates the humble and the historic:
- Bulgur wheat in pomegranate juice with pistachio hummus and breaded eggplant
- Lionfish “bourdeto” with sweet onions, paprika, and pasta
- Okra from Lasithi with codfish keftedes
- Slow-cooked Elounda goat with green beans, carrot–apple purée
- A nostalgic finale: almond cake, just like the old days
Each dish is a tribute to local producers, rare ingredients, and forgotten recipes — lovingly revived and presented with passion. From guests of the hotel to curious gourmets from beyond, everyone is welcome to taste what makes Cretan cuisine a cultural treasure.
